Gluten-free Italian Summer Snackwich recipe

Chef’s Note: Summertime is when we all are looking for that simple meal or snack that won’t add pounds to our weight and we will not feel guilty when we eat it. I came up with what I call my Gluten Free Italian Summer Snackwich. Just think a sandwich without the bread, instead, Iceberg salad leaves, so go on, you can have more than one and not feel guilty…Enjoy!

Ingredients needed:

• Fresh iceberg salad (5 to6 large leaves of lettuce)

• 2 to 3 slices of mozzarella cheese

• Two slices of large hot house-tomatoes (or your favourite tomato)

 5 – 6 slices of San Daniele Mortadella 

• 3 to 4 large pimento stuffed olives (chopped)

• A teaspoon of capers

To assemble your sandwich: 

• Wash your lettuce and then gently dry it with a cloth

• Lay down your lettuce, onto your plate 

• Place your thin sliced mozzarella cheese on top of the lettuce

• Place your slices of tomatoes on top of the mozzarella cheese

• Garnish tomato slices to taste (if you prefer)

• Place your San Daniele slices on top of the mozzarella cheese.

• Garnish by spreading the capers and diced pimento olives on top

• Dig in with your knife and fork

Tip: You can add another leaf on top and roll it up and eat it like a sandwich wrap!
