Here is a classic Canadian tradition — don’t wait for Christmas! The Christmas Morning Wife (husband/anyone who cooks) Saver can be prepared the day before and just popped into the oven on Christmas morning.

Ingredients for Christmas Morning Wife Saver

16 slices white bread, crusts removed 16

16 slices of canadian back bacon or ham

16 slices of sharp (old) cheddar cheese

6 eggs 6

1/2 tsp pepper 2 ml

1/2 to 1 tsp dry mustard 2 to 5 ml

1/4 cup minced onion 60 ml

1/4 cup finely chopped green pepper 60 ml

1 to 2 tsp worcestershire sauce 5 to 10 ml

3 cups milk 750 ml

dash tabasco

1/2 cup butter 125 ml

crushed corn flakes cereal

Method

Put 8 pieces of bread in a 13- by 9-inch (33 by 23 cm) buttered glass baking dish. Add pieces to cover dish entirely. Cover bread with thinly sliced bacon. Top with slices of cheddar cheese. Cover with slices of bread. In a bowl, beat eggs and pepper. Add mustard, onion, green pepper, worcestershire, milk and tabasco. Pour over bread, cover and refrigerate overnight. In the morning, melt butter and pour over top. Cover with cereal. Bake at 350°f (180°c), uncovered, 1 hour.

Let sit 10 minutes before serving. Serve with fresh fruit.

Serves 8.
