Chef Schulz’s Barbie themed cupcake recipe

Chef’s Note: Cupcakes are one of the easiest desserts to make. Being creative will make them memorable. You’ll be surprised what food colouring can do. Since the Barbie craze, I decided to try my hand at what I call Barbie Muffin Cupcakes. These are sure to be a hit at breakfast or any time both for children and adults, just watch them disappear….Enjoy!

Ingredients needed (Recipe makes 12 cupcakes):

• One and a half cups of all-purpose flour
• 1 and 1/2 tablespoons of baking powder
• Half a cup of unsalted butter

• 1 and 1/4 cup of sugar

• 1/4 cup of 2% milk
• 2 large eggs
• 2 teaspoons of vanilla extract
• 12 cupcake baking cups

• One muffin baking pan

• Sugar hearts (White or pink)

• Pink crystal sugar

• Pinch of salt (to taste)

Ingredients needed for your PINK frosting:

• 1/2 cup of unsalted butter at room temperature ((take butter out of fridge 1 hour before)
• 4 cups of icing sugar
• 1/4 cup of whipping cream (35% cream)
• 2 teaspoons of vanilla extract
• 2 tablespoons of pink food colouring

Making the Cupcakes:

• Preheat your oven to 176 Celsius (350 Fahrenheit)
• Place cupcake baking cups in the baking pan
• Take a large bowl and place flour, baking powder, sugar, 2 large eggs, ¼ cup of Milk, and salt to taste.
• Use an electric mixer and mix the ingredients until thoroughly mixed. If more milk is needed, just a as required.
• Once batter fully mixed, take an ice cream scooper and fill each muffin cup until about 3/4 full. 
• Place the muffin pan in the oven and bake for 18 to 20 minutes.
• Once baked take muffin pan out of the oven set aside to let it cool completely.

Making the icing sugar:


• Place ½ cup of butter, icing sugar, cream, vanilla extract and salt (to taste). Mix together with blender until stiff and fluffy.

• Add two to three drops of your pink food colouring (if a lighter shade of pink is desired add 1 or 2 more drops of the pink food colouring).


• Continue beating with the blender for an additional 1 to 2 minutes making sure the frosting stays stiff and fluffy.


• Take a tablespoon and place icing sugar on top of each cupcake.

• Add your decorations; the crystal sugar and red sugar hearts.
